white chicken chili

Here's a delicious, satisfying soup to have on a cold winter night. The toppings are a must!

1 medium onion, chopped
4 oz can green chiles
2 cloves garlic, minced
5-6 cups chicken broth
3 - 15 oz cans Great Northern Beans, drained & rinsed
3 tsp cumin
salt & pepper
2 cups cooked, shredded chicken
1 cup frozen corn
fresh cilantro, minced

Toppings:
shredded co-jack cheese
sour cream
lime wedges
corn tortilla chips

Saute onion in olive oil till tender. Add garlic & chiles. Cook for 1-2 minutes. Add chicken broth. Puree one can of beans in a food processor or a blender. (Adding just a little bit of broth to the beans makes this easier.) Add to soup along with 2 remaining cans of whole beans. Season with cumin, salt & pepper. Add cooked shredded chicken and corn. Bring to a boil. Stir in cilantro, ladle in a bowl and top with your choice of toppings.
