juicy, delicious raspberries

On Saturday afternoon Elle and I picked raspberries at a local farm for awhile. The plants were loaded with ripe berries and within an hour we had 4 overflowing quarts of berries and hadn't even made it 1/3 of the way down the row. It was fun picking! While we were out there Elle said, "Mommy, you should blog about this!" I thought that was pretty cute. :)

These are the berries that I have left after making two fruit pizzas and after sharing a quart with my neighbor who gives us tomatoes and squash from his garden. I am going to put them in the freezer to use this winter in smoothies. I plan to go pick again and make some raspberry jam and hopefully some raspberry topping for pancakes and icecream as well.


I thought I would share the recipe for the fruit pizza. I never was a big fan of this dessert until I tried my neighbor's. This is her recipe and I think it's the best!

Fruit Pizza

1 roll of refrigerated sugar cookie dough - Press into a jelly roll pan. Bake at 350 degrees for 12 minutes or until lightly browned. Cool completely.

Combine:
8 oz softened cream cheese
1/3 cup granulated sugar
1/2 tsp vanilla

Spread this frosting over the cookie. Then arrange the fruit of your choice on top. My favorite combination is strawberries, raspberries and blueberries.

Glaze:
1/2 cup strawberry jam
1 Tbsp water

Melt in the microwave and then drizzle over the fruit. I like to put the glaze on the pizza about an hour before serving. If it's done too soon in advance the cookie crust will get too soggy.
