special k bars

It's time again for the Recipe Box Swap hosted by Randi. The theme this time is Cookies and Bars. I can't wait to browse through all of the recipes!

The recipe I am sharing is for Special K Bars. They are often at the bake sale tables at our church for missions fundraisers. I can never resist them!

Special K Bars

1 cup sugar
1 cup white corn syrup
1 1/2 cups peanut butter

1 tsp vanilla
6 cups Special K cereal
1 cup chocolate chips
1 cup butterscotch chips

Mix sugar and corn syrup in a large saucepan. Cook over medium heat, stirring occasionally, just until it comes to a boil. Remove from heat. Add peanut butter and vanilla and stir until melted. Add cereal and stir until coated. Pour into an ungreased 9 x 13 in. pan and pat down evenly. Melt chocolate chips and butterscotch chips together. Spread on top. Cool and cut into bars.

My daughter makes something similar to these, but she just adds whatever cereal is on hand. I agree that they are really good!

These remind me of a chex mix my sister makes with the corn syrup, etc. Sooooo bad for my waistline. Can.not.stop.eating stuff like this that is just one little piece, and then another, and another.

It's been years since I've made special K bars. I never thought they turned out very well, I will have to try your recipe!
