carrot leek soup

For Randi's Recipe Box Swap I'm sharing a new recipe I made for lunch yesterday. Thomas had a sore throat and a slight fever and this was just what he needed to help him feel a little better. It's a great recipe for a light lunch.

Carrot Leek Soup

1 bunch leeks, thinly sliced
olive oil
4 large carrots, sliced
3 medium potatoes, peeled and cubed
1 - 32 oz box chicken broth
2 cups milk
salt and pepper

In a large saucepan, saute leeks in a couple Tbsp. olive oil until tender. Add carrots, potatoes and broth; bring to a boil. Reduce heat; cover and simmer until vegetables are tender. Puree soup in blender, in batches. Return to pan and stir in milk. Add salt and pepper to taste. Heat through.

I am always looking for more veggie recipes! Honestly I have never used leeks before, but I think they taste like onions? Thanks for sharing!
