cowboy cookies

I used to make these cookies all the time growing up. I'm pretty sure it was just so I could snitch the dough! If you are craving oatmeal chocolate chip cookies these will not disappoint. Take them out of the oven a minute before you think they are done that way they are super soft. They are especially good frozen. Sounds weird I know, but try it! I actually prefer most cookies frozen.

Cowboy Cookies

1 cup butter (room temp)
1 cup sugar
1 cup brown sugar
1 tsp vanilla
2 eggs
2 cups flour
1 tsp baking soda
1/2 tsp baking powder
2 cups oatmeal
12 oz chocolate chips

Cream together butter, sugars and vanilla. Add eggs and combine. Add flour, baking soda and baking powder. Stir until mixed, then add oatmeal and chocolate chips. Bake at 350 degrees for 12 - 15 minutes. Let sit on cooking sheet for a minute or two before moving to cooling racks.

so I am creeping on your page and came across these..so we are having a cookie exchange at work and thinking about these? Do they make a lot?
