another favorite dessert recipe

I harvested my first bunch of rhubarb tonight and thought that I would share one of my favorite recipes to make with it. It's such a simple recipe -

Rhubarb Custard Cake

1 yellow cake mix - mix as directed on the package and pour into a greased 9x13 pan.

Sprinkle 4 cups of chopped rhubarb on top of the cake batter. Then sprinkle 1 cup of white sugar on top of the rhubarb. Lastly, pour 1 pint of whipping cream over all.

Bake at 350 degrees for 50-60 minutes. Refrigerate after cooled down.

The rhubarb will sink to the bottom and the sugar and whipping cream will form a custard underneath the cake. So good with a scoop of vanilla icecream!
