banana bread

I found this banana bread recipe a few years ago and it turns out excellent every single time. We never seem to eat up our bananas before they start turning brown and none of us like them when they get too ripe anyway so we mix this bread up a lot! The kids and I don't care for nuts in our banana bread but Scott does. I almost always double this recipe and will sometimes add 1/2 cup of walnuts or pecans to one loaf for him.

Banana Bread

3/4 cup overripe bananas, mashed
1 stick butter, melted
1 cup sugar
2 eggs, beaten slightly
1 1/4 cups flour
1 tsp baking soda
1 tsp salt

Preheat the oven to 325 degrees. Cream together the bananas, butter and sugar. Add the eggs and mix. Then add the rest of the ingredients and mix well. Pour into a 9x5x3 inch greased loaf pan. Bake 45 - 55 minutes until golden brown or until a toothpick inserted in the center comes out clean.

You are making me hungry, again! :o) Of course, I will post the pumpkin bread recipe! I will try to get to that sometime next week, I am SO swamped right now and I am going to have to stay off the computer a lot this weekend! I've got SO much to catch up on with schedules and projects around the house. Anyway, this recipe looks VERY good and I will have to try it soon, if it's as good as the pumpkin bread, my bunch will love it! :o)
